Dal Fry

1. Split pigeonpeas- 1/2 cup
2. Split Bengal grams-1/4 cup
3. Split green gram -1/2 cup
4. lentil-1/4 cup
5. green chillies-4 slit into halves
6. curry leaves-2 stems
7. crushed garlic- 2 tbsp
8. crushed ginger-1/2 tbsp
9. lemon juice-1/2 tbsp
10. onion- 1 well chopped
11. chopped coriander-1 tbsp
12. cumin seeds–1/2 tbsp
13. mustard seeds-1/2 tbsp
14. red chilli powder-1/2 tbsp
15. turmeric powder-1/2 tbsp
16. powdered spices(cinnamon+cardamom+clove)-1/4 tsp
17. Cooking oil- 3 tsp
18. Salt to taste
Method:
a) Wash all the dals together thoroughly and soak for ten minutes.
b) Put in a pressure cooker and add salt and turmeric powder and cook till done.
c) After 5 min.s remove dal and beat with hand beater.
d) Now make thin paste of the dry spice powders.
e) Put two tbsp of ghee in pan, add the chopped onion and fry till turns pink.
f) Add spice paste to it, fry for a minute more.
g) Add the dal and bring to boil. Let it simmer for five minutes.
h) Put the rest of the oil in a pan and heat it. Add cumin and mustard seeds and let it splutter.
i) Add green chillies, curry leaves, garlic and ginger paste. Fry for ½ minute.
j) Take it all out of flame and keep aside.
k) Add lemon juice and chopped coriander.
l) Pour it all into dal and put on the lid for about two minutes.
m) Stir and mix well.
serve hot with hot rice or roti. It’s delicious both ways.

1. Whole Black gram- 1 cup
2. Red kidney beans (Rajma)-2 tbsp.
3. Onion-1(well chopped)
4. Tomato-1(well chopped)
5. Ginger-1 inch
6. green chillies- 2-3 well chopped
7. coriander leaves-(well chopped)1tbsp
8. garlic paste-1tbsp
9. curd-1/2cup
10. cream(malai)-1/2 cup
11. butter-1 tbsp
12. cumin seeds-1tbsp
13. turmeric powder-1 tbsp
14. spice powder(clove+cinnamon+cardamom)-1tsp
15. Red chilli powder -1tsp
16. Half tbsp dhania powder
17. Salt to taste
Method
a) Soak rajma in all night. Next morning, wash it well with 1 cup water and salt pressure-cook with Black gram till it softens.
b) Take it out and cool. Mash and boil again for about 20 minutes.
c) Add curd and cream to the dal.
d) Take the oil in a pan oil and heat.
e) Add cumin seeds when it splutters add garlic paste, fry till light brown.
f) Add onions and fry again till golden brown.
g) Add ginger, green chillies and tomatoes and fry till tomatoes soften.
h) Then add turmeric powder, chilli powder, dhania powder and salt; fry for one minute.
i) Add dal to the above mixture, stir on medium flame.
j) When it starts boiling remove from the gas.
k) Mix spice powder, garnish with coriander leaves and add a bit of butter.
Serve hot with rice or roti.
