Ingredients:
1. 25gm chana dal
2. 25gm urad dal
3. 25gm arhar dal
4. 25gm moong dal
5. 25gm lentil
6. 2 tomatoes- chopped well to small pieces
7. 1 big onion- well chopped
8. 2 garlic cloves-well crushed
9. Ginger ½ inch well crushed
10. 2 green chillies- slit into halves
11. 3-5 red chilli
12. ½ teaspoon mustard
13. 1 teaspoon cumin seeds
14. 2 bay leaves
15. 2 stem curry leaves
16. Chopped coriander leaves- ½ cup
17. 1 teaspoon turmeric powder
18. 3-teaspoon of any refined cooking oil
19. 1 teaspoon cumin seeds powder
20. 1 tea spoon chili powder
21. Cinamon-1 inch/ clove-2(powdered)
22. Salt to taste
Method:
a) Mix all dal and wash well.
b) Add salt, turmeric powder with 4 cups of water in a Pressure Cooker and boil on medium flame.
c) After 5 minutes or 1 or 2 whistles take it out of flame.
d) Release pressure by lifting the vent with a ladle and open the lid.
e) Now heat 3 teaspoon of oil in a frying pan. Add cumin seed, mustard, bay leaves and red chillies. When it smell s good add chopped onions, crushed garlic and ginger, green chillies and fry till it turns golden brown.
f) Now add all this to the boiled dal in the pressure cooker and stir well.
g) Add chopped coriander leaves to it and cook with closed lid for another 1 min.
Serve hot with rice or roti.
Moong Dalma (mixed veggies with moongdal)
Ingredients:
- 1/2 cup moong dal
- 1 tablespoon cumin seeds
- 1 inch ginger - crushed
- 1 tablespoon ghee
- 2 tea spoon cumin powder
- chilli power to taste
- 2 red chillies
- salt to taste
- 1 & 1/2 cups of cut vegetables such as:
Pumpkin/ yam /papaya/plantain/arum)
Method:
a) First of all dry- fry the moongdal in a pan for about 2 minutes, not more. Soak the semi fried moong dal in water and keep it aside.
b) Heat ghee in a pressure cooker. Add cumin seeds and red chillies and let it splutter.
c) Then add the crushed ginger and vegetables. Stir fry it for a minute.
d) Add the soaked moong dal, salt, cumin powder and chilli powder. Also add water as required. Now close the pressure cooker and let it cook for about 15 minutes.
The moong dalma is ready. Serve this with steaming hot rice.
Dalma (mixed veggies with dal)
Ingredients:
1. 100gm pigeon pea /arhar dal
2. 50gm raw papaya
3. 50gm striped pear gourd
4. 50gm parwal
5. 50gm potato
6. 1 big onion
7. 1 cup grated coconut
8. 3-5 red chilli
9. ½ teaspoon mustard
10. 1 teaspoon cumin seeds
11. 2 bay leaves
12. ½ teaspoon turmeric powder
13. 3-teaspoon of any refined cooking oil
14. ½ teaspoon cumin seeds powder
15. ½ tea spoon chili powder
16. Salt to taste
Method:
a) Wash the vegetables thoroughly.
b) Cut them into small pieces.
c) Put the vegetables, dal, salt, ½ teaspoon turmeric powder with 3 to 4 cups of water in a Pressure Cooker and boil on medium flame.
d) After 5 minutes or one whistle take it out of flame.
e) Release pressure by lifting the vent with a ladle and open the lid.
f) Now heat 3 teaspoon of oil in a frying pan. Add cumin seed, mustard, bay leaves, chopped onions and 3-4 red chillies. Fry till they smell good and turn golden brown.
g) Add grated coconut to it
h) Now add all this to the boiled dal and vegetables of the pressure cooker and stir well.
i) Add fried cumin seed powder and chilli powder. Close the lid and heat further for 2 minutes.
Your dalma is ready. Serve with rice roti.It’s a famous and popular Oriya dish.
