Shahi Arhar Dal
Ingredients:
1. 150 gm arhar dal
2. Ginger ½ inch well crushed
3. 2 green chillies- slit into halves
4. 1 teaspoon turmeric powder
5. 3-teaspoon of Desi ghee
6. 2 big spoonful of curd
7. 1 tea spoon chilli powder
8. Cinamon-1 inch/ clove-2/Cardamom-1/Zaffran-1 pinch(all powdered)
9. Salt to taste
Method:
a) Mix all dal and wash well.
b) Add salt, turmeric powder with 4 cups of water in a Pressure Cooker and boil on medium flame.
c) After 5 minutes or 1 or 2 whistles take it out of flame.
d) Release pressure by lifting the vent with a ladle and open the lid.
e) Add the curd and crushed ginger to it and mix well. Separate the water content and keep it aside.
f) Now heat ghee in a frying pan. Add cumin seed and green chillies.
g) Add the cooked dal to it and fry for 3 minutes.
h) When it emits good smell again mix the dal water kept aside to it.
i) Put all the spice powder to it.
j) Stir well and with covered lid cook for a few minutes.
Serve hot with rice or roti.
Moong Dalma (mixed veggies with moongdal)

1. 1/2 cup moong dal
2. 1 tablespoon cumin seeds
3. 1 inch ginger - crushed
4. 1 tablespoon ghee
5. 2 tea spoon cumin powder
6. chilli power to taste
7. 2 red chillies
8. salt to taste
9. 1 & 1/2 cups of cut vegetables such as:
Pumpkin/ yam /papaya/plantain/arum)
Method:
a) First of all dry- fry the moongdal in a pan for about 2 minutes, not more. Soak the semi fried moong dal in water and keep it aside.
b) Heat ghee in a pressure cooker. Add cumin seeds and red chillies and let it splutter.
c) Then add the crushed ginger and vegetables. Stir fry it for a minute.
d) Add the soaked moong dal, salt, cumin powder and chilli powder. Also add water as required. Now close the pressure cooker and let it cook for about 15 minutes.
The moong dalma is ready. Serve this with steaming hot rice.
Horse gram Dal (kolatha dal)

Ingredients:
1. 150gm horse gram
2. 50gm rice flour
3. 2-3 tomatoes
4. Dried mango slices if you have (in Oriya it is called ambula)
5. 1 teaspoon mustard seeds
6. 50gm garlic
7. 2 teaspoon mustard oil
8. Salt to taste
Method:
a) Boil the kolatha dal (horse gram) in pressure cooker. Add salt.
b) Make a mixture of rice flour and water.
c) Add the flour mixture and go on stirring continuously.
d) Add tomato and dried mango slices and cook again for 5 minutes.
e) Fry mustard seeds and garlic in mustard oil and add to the prepared kolatha dal.
f) Now your Kolatha Dal is ready. It should be served hot.
Horse gram dal takes more time to boil than other dals.This dal is best preventive and cure for gall bladder stone. It tastes nice. It tastes best in cold or rainy season.
